  • Horse Sashimi with tender texture and natural sweetness.
  • Stewed Abalone from Yamanashi—a rare and savory local specialty.
  • “Fujinosuke” Trout born from King Salmon and rainbow trout, raised in pure Kai water.
  • Koshu Wine Beef, raised on grape pulp, offering tender texture and a slightly sweet flavor.
  • Houtou Hot Pot, a traditional Koshu dish once favored by Takeda Shingen. Choose from regional varieties like duck or shabu-shabu.
